The longjing tea is considered as a famous variety of the green tea originated in Hangzuo, Zhewijang Province, China. According to its maker, the tea is divided into seven grades from superior, special and then one to five.
The longjing tea leaves as pan fried to be able to stop the fermentation process and when the leaves are already steeped, it then produces a yellow-green hue. It is produces a gentle aroma and pure aroma, and a very rich flavor. It contains vitamin C, amino acids and high concentration of catechins.
Its name simply means “dragon well” and it supposed to resemble the movement of the traditional Chinese dragon. Among its varieties are Xi Hu Longjing, Shi Feng Longjing, Mei Jia Wu Longjing, Bai Longjing and Qian Tang Longjing. Chinese people say that in order to attain the best taste of the tea, spring water from the “Hu Pao Quan” must be used.
