The Taste of Kare-Kare

Kare-kare is a famous Philippine dish which is often referred as a stew. It is made of peanut sauce and is added with different kinds of vegetables, stewed oxtail, beef and offal or tripe. Meat like goat meat or chicken may also be used or added in the dish.Kare-Kare

The delicacy is usually eaten with bagoong or shrimp paste. It is also spiced with chili, added with calamansi lime juice. The dish is mostly served in fiestas or festivals. In the Tagalog region, people are fond of serving the dish on special occasions.

The dish is so easy to prepare. One only has to prepare the oxtail and must cut it into 2-inch lengths. The ox tripe is boiled together with the oxtail to tender. After the meat is already tender, the soup now becomes glutinous or sticky. To make the soup richer, ground peanuts are added to the soup or the tendered meat. One can now then pour on the different vegetables needed to enhance the taste and to add nutrition to the dish.
